He honed his craft during 10+ years at The Grounds of Alexandria, one of Sydney’s most renowned café destinations, before taking on leadership roles as a Multi-Venue Manager at Airport Retail Enterprises (ARE) and Venue Manager at Kanade Japanese Restaurant.
Erick’s dedication to creating exceptional café experiences is driven by his love for great food, expertly crafted coffee, and outstanding customer service. At Kingship Coffee, he leads the team with a commitment to excellence, ensuring every guest feels welcomed and every cup served meets the highest standard.
With nearly a decade of experience leading kitchens, Jay Patel is the culinary force behind Kingship Coffee. Specializing in Mediterranean cuisine, he began his journey as a cook at Arebella Restaurant, where his dedication and skill quickly earned him a promotion to Head Chef.
Over the years, Jay has perfected his craft, overseeing back-of-house operations and ensuring every dish meets the highest standards of flavor and presentation.
As Head Chef for Kingship Coffee’s dinner service, he brings a chef’s touch to the menu, crafting dishes that complement the café’s exceptional brews.
As the creative mind behind Kingship Coffee’s beloved menu, Mark Borg brings over 27 years of culinary expertise to the table.
His career spans some of the world’s finest kitchens, including Sydney’s Café Sydney and Astral, as well as London’s Morton’s in Mayfair and Prism Restaurant of the Harvey Nichols group.
Passionate about bold flavours and seasonal ingredients, Mark transforms every dish into an experience—where creativity, quality, and passion come together.
As Head Chef for breakfast and lunch, he leads the kitchen with a dedication to excellence, ensuring that every plate reflects Kingship Coffee’s high standards and signature touch.
